There's a lot of us that do just fine maintaining our own servers but there comes a time where we need immediate assistance and are more than willing to pay a premium for it.
Many providers already offer this on either a monthly agreement or in a pre-paid credit basis.
Finding help at 3AM when a server refuses to boot in anything but recovery mode is relatively impossible.

Honestly, something like this would make perfect sense. And I don't see why it wouldn't be in the realm of DigitalOcean, as I don't see them as "just a VPS provider". It would be helpful to have 24/7 or 12/5 support for when things don't go wrong. And obviously, that would have to be paid as a premium.
